Sri Lankan food’s simplicity can be deceptive. At the outset, the presence of coconut in nearly every dish might lend the cuisine a certain homogeneity, but I soon discovered there are deep layers beneath. Besides coconut, fish and aromatic spices are the common ingredients. Food in the north of the country is typically characterised by explosive South Indian flavours, while the south champions fish and other seafood in every form.
